Coconut mango chicken cups are my go to entertaining dish . They pack a whole lot of flavor in tiny wanton cups. I used this recipe as a guideline while making a few changes of my own.
This recipe yields 24 cups
Find these little guys in the "fresh" section near the tofu & fresh herbs
I subbed 3 huge scoops of apricot preserves for the 1/3 cup mango chutney
I added two heaping tablespoons of the exotic blend / middle eastern spice from Saffron Restaurant in Minneapolis
I omitted the lime juice in this batch & let it simmer for nearly 30 minutes
Make sure when scooping in the mixture you get equal amount sauce in each cup
